  • It takes 5-6 lobsters to produce one pound of claw and knuckle lobster meat. Similarly, approximately 5-6 lobster tails are needed to make one pound of lobster tail meat, depending on the size of the tails.
  • Both lobster tail meat and claw & knuckle meat are delicious and flavorful. The choice depends on your personal preference and what you’re preparing. Lobster tail meat is firmer and more akin to traditional meat proteins like steak, being larger and more robust. On the other hand, claw and knuckle meat is sweeter and more tender, commonly used in traditional lobster rolls. We offer both types of meat in 2 lb. increments.

Handling, Freezing & Cooking

  • All orders include free expedited shipping to all 50 states, including Alaska and Hawaii (USA only).
  • We ship Monday through Thursday. Please allow 24-48 hours for order processing. Orders placed Thursday through Sunday will be processed on Monday.
  • A tracking number will be emailed to you for checking your shipment status.
  • It’s important to be home to receive your package immediately and place it in your refrigerator or freezer.
  • We use expertly designed boxes with insulation and freezer packs. However, some thawing of frozen items may occur. According to the USDA, frozen seafood that hasn’t exceeded an internal temperature of 40 degrees Fahrenheit and still feels cool to the touch can be safely stored in the freezer.
  • Items shipped frozen that arrive over 40 degrees Fahrenheit should be placed in the refrigerator and thawed completely for use within 2 days.
  • Upon receiving your order, remove the lobster meat from the shipping box immediately. If you plan to use it within the next 2 days, place it in the refrigerator to thaw. For more details, watch our video on how to receive your lobster meat order.
  • If you’re not planning to use the lobster meat in the next 2 days, place it in your freezer.
  • When ready to eat, remove it from the freezer and place it in your refrigerator 24 hours before use to thaw.

The expiration date on our flash-frozen lobster meat is 2 years from the processing date. It is best to use it within 30 days of receiving.

  • Since our wild-caught lobster meat is already cooked, you can thaw it and enjoy it cold, similar to traditional lobster rolls. Always thaw lobster meat in the refrigerator, ideally over a slow 24-hour period. Avoid thawing at room temperature.
  • When reheating lobster meat, aim for a temperature of approximately 140 degrees Fahrenheit. Be careful not to overcook, as this can affect the taste.
